01 - Preheat oven to 425°F. Line a baking sheet with parchment paper.
02 - If using fresh potatoes, toss the cut fries with olive oil, salt, and pepper. Spread in a single layer on the baking sheet.
03 - Bake for 25–30 minutes, flipping halfway, until golden and crispy. If using frozen fries, cook according to package instructions.
04 - While fries bake, cook turkey bacon in a skillet over medium heat for 5–7 minutes until crispy. Transfer to a paper towel-lined plate and chop into small bits.
05 - Remove fries from oven. Immediately sprinkle with shredded cheddar. Return to oven for 3–5 minutes, until cheese is melted.
06 - Remove from oven, top evenly with turkey bacon bits and green onions, if using. Serve hot, with sour cream on the side if desired.
