01 - Place chicken breasts in bottom of slow cooker.
02 - Layer chopped onions, garlic, and broccoli florets over chicken.
03 - Whisk together chicken broth, cream cheese, sour cream, milk, Dijon mustard, paprika, salt, and pepper in medium bowl until smooth.
04 - Pour sauce mixture evenly over chicken and vegetables.
05 - Cover and cook on high for 4 hours or on low for 6-7 hours until chicken is tender and cooked through.
06 - Thirty minutes before serving, shred or slice chicken directly in slow cooker. Stir in shredded cheddar cheese.
07 - For thicker consistency, mix cornstarch with 2 tablespoons water to create slurry. Stir into slow cooker and cook 15-20 minutes longer.
08 - Taste and adjust seasoning as needed. Serve hot garnished with extra cheddar or fresh herbs.
