01 - Preheat oven to 375°F and line a baking sheet with parchment paper.
02 - Combine mozzarella and cream cheese in a microwave-safe bowl. Microwave for 1-2 minutes, stirring every 30 seconds, until completely melted and smooth.
03 - Add almond flour, baking powder, and salt to the melted cheese mixture. Stir thoroughly to combine.
04 - Add the egg and mix until a soft, sticky dough forms. Use a spatula or lightly oiled hands to work the ingredients together.
05 - Place dough between two sheets of parchment paper. Roll out into a rectangle approximately ¼ inch thick.
06 - Transfer the dough with the bottom parchment paper onto the baking sheet.
07 - In a small bowl, whisk together melted butter, minced garlic, and chopped parsley.
08 - Brush half of the garlic butter mixture evenly over the dough surface.
09 - Bake for 15-18 minutes until golden brown and set.
10 - Remove from oven, brush with remaining garlic butter, and sprinkle with Parmesan cheese if using. Slice into 8 even breadsticks and serve warm.
