Soft almond flour dough with melted mozzarella, topped with garlic butter and fresh parsley

# What You Need:

→ Cheese Dough

01 - 1 ½ cups shredded mozzarella cheese
02 - 2 oz cream cheese
03 - 1 cup almond flour
04 - 1 large egg
05 - ½ tsp baking powder
06 - ¼ tsp salt

→ Garlic Butter Topping

07 - 3 tbsp unsalted butter, melted
08 - 2 cloves garlic, minced
09 - 1 tbsp chopped fresh parsley
10 - 2 tbsp grated Parmesan cheese

# How To Make It:

01 - Preheat oven to 375°F and line a baking sheet with parchment paper.
02 - Combine mozzarella and cream cheese in a microwave-safe bowl. Microwave for 1-2 minutes, stirring every 30 seconds, until completely melted and smooth.
03 - Add almond flour, baking powder, and salt to the melted cheese mixture. Stir thoroughly to combine.
04 - Add the egg and mix until a soft, sticky dough forms. Use a spatula or lightly oiled hands to work the ingredients together.
05 - Place dough between two sheets of parchment paper. Roll out into a rectangle approximately ¼ inch thick.
06 - Transfer the dough with the bottom parchment paper onto the baking sheet.
07 - In a small bowl, whisk together melted butter, minced garlic, and chopped parsley.
08 - Brush half of the garlic butter mixture evenly over the dough surface.
09 - Bake for 15-18 minutes until golden brown and set.
10 - Remove from oven, brush with remaining garlic butter, and sprinkle with Parmesan cheese if using. Slice into 8 even breadsticks and serve warm.

# Expert Suggestions:

01 -
  • You get that irresistible pull-apart bread experience without the blood sugar spike or guilt
  • The dough comes together in minutes and bakes up golden with that perfect garlic butter aroma
02 -
  • Work quickly with the dough while it is still warm from the melted cheese - once it cools, it becomes much harder to handle and shape
  • Use parchment paper on both sides when rolling to prevent sticking without adding extra oils that could make the dough greasy
03 -
  • Use full-fat cheese - low-fat versions do not melt properly and will result in a dry, crumbly dough that falls apart
  • Let the breadsticks rest for 2-3 minutes after baking before slicing - this clean cut without tearing
