# Expert Suggestions:

01 -
  • The sauce that forms in the pan is the kind you will want to spoon over everything including plain rice the next day
  • Thirty five minutes from cutting board to plate with almost zero cleanup makes it a weeknight weapon
02 -
  • Overcooking shrimp is the single biggest mistake you can make here and they go from perfect to rubbery in about sixty seconds
  • Crowding the pan drops the temperature and steams the shrimp instead of searing them so use a genuinely large skillet
03 -
  • Dry the shrimp with paper towels and let them sit uncovered in the fridge for 15 minutes before cooking for the best sear
  • Season the shrimp directly with a pinch of salt before they hit the pan rather than relying only on the sauce seasoning
