01 - Combine cranberries, orange juice, brown sugar, orange zest, and salt in a small saucepan. Bring to a simmer over medium heat and cook for 8-10 minutes, stirring occasionally, until cranberries burst and sauce thickens. Remove from heat and allow to cool completely.
02 - In a large mixing bowl, combine ground turkey, onion, garlic, parsley, Dijon mustard, thyme, salt, and pepper. Mix gently until just combined, being careful not to overwork the meat. Shape the mixture into 4 equal patties, slightly larger than the buns to account for shrinkage during cooking.
03 - Heat olive oil in a large skillet or grill pan over medium heat. Place patties in the pan and cook for 5-6 minutes per side until golden brown and cooked through to an internal temperature of 165°F. Avoid pressing down on patties while cooking to retain juices.
04 - Place a lettuce leaf on each toasted bun bottom. Add a cooked turkey patty, followed by a tomato slice and a generous spoonful of cooled cranberry sauce. Top with red onion slices if desired, and finish with the bun top.
05 - Serve immediately while the patties are still warm and the cranberry sauce adds a sweet-tart contrast. Pair with roasted vegetables, sweet potato fries, or a simple green salad.
